The 6 Best Gin Distilleries in NSW to Visit this Winter

There’s nothing like a nice G&T to warm the cockles of the heart in winter. And given the cooler months are well and truly upon us, it’s high time we covered the best gin distilleries in NSW.

From hearty highland haunts to chic inner-city distilleries, here are the top six NSW spots to taste artisanal juniper-infused goodness.

Husk Distillers

A Tweed Hinterland hotspot, Husk has been wowing the Northern Rivers with its delicious spirits since 2012. While the acclaimed distillery has made head waves for its sugar cane rum, it first rose to fame through the trademark Ink Gin.

The secret ingredient? Clitoria ternatea, an exotic Thai flower that changes hue with added acidic content (the classic lemon, lime, or tonic will do). Visit the scenic paddock-to-bottle spot to sip this transformative drop and other tasty tipples at the source.

Cape Byron Distillery

Eco-conscious gin sippers will adore the Cape Byron Distillery story. Once a dilapidated old dairy farm, this sprawling hinterland property is now a thriving wildlife-rich rainforest. Decades ago, the owners planted over 35,000 trees to restore a portion of the long-lost Big Scrub.

Nowadays, a sustainable distillery concocts the good stuff on-site, sourcing rainforest botanicals straight from the backyard. Jump on a guided walking tour of the verdant property and sip the renowned Brookies Gin during a distillery tasting session.

Archie Rose

In the hip, inner-Sydney suburb of Rosebery, Archie Rose distils a slew of boozy spirits on-site. While its whisky is wonderful, most folks come to gulp creative gin cocktails like the sweet and citrusy Super Sling.

Keen to learn the art of gin distilling? Sign up for one of their informative Gin Masterclasses to discover the tricks of the trade. Distillery tours and a buzzy industrial-chic bar complete the package.

Distillery Botanica

A must for gin connoisseurs on the Central Coast, Distillery Botanica has won a smorgasbord of awards. Its founder is astute herbalist Philip Moore, who plucks his own homegrown botanicals on-site. Guests are free to wander around the Victorian-style cottage gardens in-between sips.

Don’t leave without trying his signature Moore’s Dry Gin, best enjoyed in a classic G&T or technicoloured cocktail.

Manly Spirits Co.

Another Sydney institution, Manly Spirits Co. kick-started the Northern Beaches boutique distilling scene in 2017. A duo of passionate locals, David and Vanessa, blend creativity and chemical engineering with stellar results.

From Australian Dry to Lilly Pilly Pink and Coastal Citrus Gin, these world-class drops ship worldwide. Pop in to slurp lip-smacking cocktails in the steampunk-style bar. Alternatively, enrol in the Stillhouse Gin school to distil your own fully bespoke bottle.

Wildbrumby Distillery

Planning a trip to the slopes this season? Then pencil in a visit to this award-winning highland haunt. Located between Jindabyne and Thredbo, it’s a convenient location for an après-ski tipple or two.

Pristine alpine water, organic fruit, and native mountain botanicals comprise its award-winning gin and tantalising schnapps. Better yet, there’s a cosy cabin-style restaurant serving hearty Austrian nosh.
