The Ink Gin Story

Husk Distillers CEO Paul Messenger began his mission to revolutionise the gin world back in 2012. He and his passionate team of expert artisan distillers wanted to create a unique drop that would achieve global recognition.

But with a befuddling array of juniper berry-infused concoctions already flooding the market, the million-dollar question was: “how?”

Four years of non-stop foraging, taste-testing, and scientific experimentation eventually led to the “eureka” moment.

The team discovered a totally unique way for the drinker to alter the appearance of their gin while simultaneously creating a cleaner, crisper flavour profile. Upon adding an exotic South East Asian flower called Clitoria ternatea (AKA butterfly pea) to their eclectic botanical mix, a brand new product was born.

After patenting and packaging were complete in 2015, the colour-transforming Ink Gin hit the shelves. The first batch sold out in three days.

One year later, when Aussie superstar Margot Robbie uploaded a happy snap of her sinking a pre-wedding Ink Gin to Instagram, the product sold out again. Her post racked up a whopping 1 million likes and propelled the product into the mainstream.

The Sciency Stuff

Ink Gin’s distinct flavour comes from the 12 botanicals that hale from all corners of the globe: Hungary, Egypt, Poland, Guatemala, Vietnam, and more.

The key ingredient to the colour change, however, is the Clitoria ternatea plant, a flower native to Thailand. The Husk team adds the flower after distillation via a process called floral infusion, which causes its mesmerising blue hue.

As Clitoria ternatea is pH sensitive, it changes to a light pink colour upon the addition of anything acidic. All your everyday gin staples—tonic water, lemon, and lime—have a high acid content, which means everybody gets to enjoy the show.

  • clitoria ternatea (butterfly pea flower)
  • coriander
  • cardamom
  • pepper berry
  • lemon myrtle
  • elderflower
  • liquorice root
  • juniper berries
  • angelica root
  • lemon peel
  • sweet orange
  • cinnamon

For the perfect serving, pour 45ml of Ink Gin into a high ball glass. Add classic tonic water (approx. 2/3) and ice, then garnish with muddle strawberries and rosemary.
